A delicious dessert combining bananas and a rich, caramel sauce inside a cobbler.

  • 4 ripe bananas, sliced
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, melt butter and mix in brown sugar and cinnamon.
  3. Add sliced bananas and cook for 5 minutes.
  4. In a bowl, combine flour, baking powder, and salt.
  5. Add milk and vanilla to the dry ingredients, mixing until smooth.
  6. Pour batter into a greased baking dish.
  7. Carefully spoon the banana mixture over the batter.
  8. Sprinkle chopped pecans on top.
  9. Bake for 35-40 minutes until golden brown.
  10. Serve warm with ice cream if desired.

Notes

  • For a richer flavor, add a splash of rum to the banana mixture.
  • This dish is best served fresh but can be stored in the refrigerator for up to three days.
