- 500 grams puff pastry
- 300 grams carrots, grated
- 150 grams dates, chopped
- 1 teaspoon curry powder
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 garlic clove, minced
- salt to taste
- pepper to taste
- Preheat oven to 200°C (392°F).
- In a pan, heat olive oil and sauté onion and garlic until translucent.
- Add grated carrots and cook for 5 minutes.
- Stir in dates and curry powder, season with salt and pepper, and cook for another 5 minutes.
- Roll out puff pastry and cut into rectangles.
- Place a spoonful of the mixture in the center of each rectangle.
- Fold the pastry over and seal the edges.
- Brush with an egg wash if desired.
- Bake in the preheated oven for 20-25 minutes until golden brown.
Notes
- These can be served warm or at room temperature.
- Great as appetizers or a light main course.
- Feel free to adjust the spice level by adding more curry powder.
