Delicious and crispy avocado fries served with a spicy chipotle aioli for dipping.

Ingredients

  • 2 ripe avocados
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tbsp adobo sauce (from canned chipotle peppers)
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the avocados in half, remove the pit, and scoop out the flesh. Cut each half into wedges.
  3. In a bowl, mix together the flour, garlic powder, smoked paprika, cayenne pepper, and salt.
  4. In a separate bowl, beat the eggs.
  5. In another bowl, place the panko breadcrumbs.
  6. Dredge each avocado wedge in the flour mixture, dip it in the egg, then coat with panko breadcrumbs.
  7. Place the coated avocado fries on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden and crispy.
  9. While the fries are baking, prepare the chipotle aioli by mixing mayonnaise, lime juice, adobo sauce, and minced garlic in a bowl.
  10. Serve the avocado fries warm with the chipotle aioli for dipping.

Notes

  • For extra flavor, you can add more spices to the breadcrumb mixture.
  • Make sure the avocados are ripe but firm to maintain shape when frying.
