- 2 ripe avocados
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- Preheat the oven to 425°F (220°C).
- Cut the avocados into wedges and set aside.
- In one bowl, mix flour, salt, paprika, garlic powder, onion powder, and black pepper.
- In another bowl, beat the eggs.
- In a third bowl, place the breadcrumbs.
- Dip each avocado wedge first in the flour, then in the egg, and finally coat with breadcrumbs.
- Place the coated avocado fries on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
