- 1 cup yellow lentils
- 1 tablespoon coconut oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 teaspoons curry powder
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 4 cups vegetable broth
- 1 can coconut milk
- 2 tomatoes, diced
- 1/4 cup cilantro, chopped
- Rinse the lentils under cold water until the water runs clear.
- In a large pot, heat the coconut oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add garlic and ginger, cooking for another minute.
- Stir in the curry powder, turmeric, and salt, cooking for an additional minute.
- Add the rinsed lentils, vegetable broth, and coconut milk to the pot.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
- Stir in the diced tomatoes and cook for another 5 minutes.
- Garnish with chopped cilantro before serving.

- This dish can be served with rice or naan.
- Adjust spices according to your preference for heat.
