- 2 cups rolled oats
- 1 cup Greek yogurt
- 3 eggs
- 1 cup blueberries
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup honey or maple syrup
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mix the oats, baking powder, baking soda, and salt.
- In another bowl, whisk together the Greek yogurt, eggs, and honey (or maple syrup).
- Combine the wet and dry ingredients until just mixed.
- Fold in the blueberries.
- Fill the muffin cups with the batter and bake for 20-25 minutes until golden brown.
- Let them cool before serving.
