- 200 grams speculoos biscuits
- 250 grams mascarpone cheese
- 200 milliliters heavy cream
- 100 grams fresh raspberries
- 50 grams powdered sugar
- 1 teaspoon vanilla extract
- 100 milliliters coffee, cooled
- In a bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form and fold it into the mascarpone mixture.
- Dip each speculoos biscuit into the coffee quickly and layer them in a serving dish.
- Spread half of the mascarpone mixture over the first layer of biscuits.
- Add a layer of raspberries on top of the mascarpone.
- Repeat the layers with the remaining biscuits, mascarpone, and raspberries.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a stronger coffee flavor, use espresso instead of regular coffee.
- Feel free to add more layers depending on the size of your dish.
