Delicious cream puffs filled with a coconut caramel cream.

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 cup sweetened shredded coconut
- 1 cup heavy cream
- 1/2 cup caramel sauce
- 1/4 cup powdered sugar
- Preheat oven to 400°F (200°C).
- In a saucepan, combine water and butter; bring to a boil.
- Add flour, stirring until the mixture forms a ball.
- Remove from heat and let cool slightly.
- Beat in eggs one at a time until smooth.
- Stir in shredded coconut.
- Drop batter onto baking sheets.
- Bake for 20-25 minutes, until golden.
- Let cool before filling with cream.
- Whip heavy cream with powdered sugar and fold in caramel sauce.
- Fill puffs with the caramel cream mixture.
Notes
- Best served fresh, but can be refrigerated for a day.
- For a lighter option, use low-fat cream.
