- 200 grams honey
- 150 grams sugar
- 200 grams ground almonds
- 150 grams flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 4 eggs
- 1 tablespoon lemon zest
- 100 grams dark chocolate (for coating)
- Preheat the oven to 180°C (350°F).
- In a bowl, mix honey and sugar until well combined.
- Add eggs one at a time, mixing well after each addition.
- Sift in flour, baking powder, and spices, stirring until just combined.
- Fold in ground almonds and lemon zest.
- Pour the batter into a lined baking tray and spread evenly.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Let it cool, then spread chocolate on top.
- Roll it up carefully and chill before serving.
