A creamy and tangy lemon curd that’s perfect for spreading on toast, filling pastries, or enjoying by the spoonful!

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 4 large eggs
  • 1/2 cup unsalted butter

Instructions

  1. In a saucepan, whisk together the sugar, lemon juice, lemon zest, and eggs until well combined.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in the butter until melted and smooth.
  4. Strain the curd through a fine-mesh sieve into a bowl.
  5. Let cool, then refrigerate until set.

Notes

  • Store in an airtight container in the refrigerator for up to 2 weeks.
