A traditional Nantucket dish, Maispudding is a creamy corn pudding that embodies the flavors of the island.

Ingredients

  • 1 cup cornmeal
  • 2 cups milk
  • 1 cup corn kernels
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cornmeal, milk, and sugar. Stir until well mixed.
  3. Add the melted butter, eggs, vanilla extract, and salt. Mix until combined.
  4. Fold in the corn kernels.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 45-50 minutes or until set and golden brown on top.
  7. Let it cool slightly before serving.

Notes

  • Can be served warm or chilled.
  • Excellent with a scoop of vanilla ice cream on top.
  • For a richer flavor, add a sprinkle of nutmeg before baking.
