- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup unsweetened shredded coconut
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup vegetable oil
- 4 large eggs
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup heavy whipping cream
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the grated carrots, sugar, oil, and eggs, and mix well.
- Add the flour, baking powder, baking soda, cinnamon, and salt, and stir until just combined.
- Fold in the crushed pineapple and shredded coconut.
- Pour the batter into a greased baking pan and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cake cool completely.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Whip the heavy cream until soft peaks form, then fold it into the cream cheese mixture.
- Spread the mousse over the cooled cake.
- Chill the cake before serving.
