Delicious dumplings made from liver served with a rich mushroom ragout.

- 500 g liver
- 250 g bread rolls
- 4 eggs
- 1 onion
- 2 tbsp butter
- Salt and pepper to taste
- 300 g mushrooms
- 200 ml cream
- 1 tbsp flour
- 1 tsp parsley
- Soak the bread rolls in water.
- Finely chop the liver and onion.
- Sauté the onion in butter.
- Mix liver, soaked bread, eggs, and sautéed onion; season with salt and pepper.
- Shape into dumplings and wrap in a cloth.
- Boil in salted water for about 20 minutes.
- For the ragout, sauté mushrooms in butter.
- Stir in flour and add cream; cook until thickened.
- Serve dumplings topped with mushroom ragout.
