- 2 pounds boneless chicken thighs
- 1 cup onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 can (14 oz) coconut milk
- 1/2 cup tomato puree
- 1/4 cup butter
- salt to taste
- 1/4 cup cilantro, chopped for garnish
- In a slow cooker, combine the chicken, onion, garlic, ginger, garam masala, cumin, turmeric, salt, coconut milk, tomato puree, and butter.
- Stir to mix all the ingredients well.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the slow cooker and stir it back into the sauce.
- Serve with rice and garnish with cilantro.
Notes
- For extra heat, add red chili flakes.
- Can be made ahead and stored in the fridge for up to 3 days.
