- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup sugar
- 1 egg yolk
- 1 tablespoon cold water
- 2 cups mixed berries (e.g., raspberries, blueberries, strawberries)
- 1/4 cup sugar (for filling)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour and sugar. Add softened butter and mix until crumbly.
- Add the egg yolk and cold water; mix until a dough forms.
- Press the dough into tartlet pans and trim the edges.
- Bake the tart shells for 15-20 minutes or until golden.
- In another bowl, combine mixed berries, sugar, cornstarch, and lemon juice.
- Fill the baked tart shells with the berry mixture.
- Bake for an additional 10-15 minutes until berries are bubbly.
- Let cool before serving.
