- 200 g digestive biscuits
- 100 g butter, melted
- 500 g cream cheese
- 150 g sugar
- 3 large eggs
- 200 ml sour cream
- 1 tsp vanilla extract
- 2 apples, peeled and diced
- 2 tbsp brown sugar
- 1 tsp cinnamon
- Preheat the oven to 175°C (350°F).
- Crush digestive biscuits and mix with melted butter to form the base. Press into the bottom of a springform pan.
- In a bowl, mix cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition.
- Stir in sour cream and vanilla extract until combined.
- Pour the cream cheese mixture over the biscuit base.
- In a separate pan, sauté the diced apples with brown sugar and cinnamon until tender.
- Spread the sautéed apples on top of the cheesecake mixture.
- Bake for 45-50 minutes, or until the center is set. Let it cool before refrigerating for a few hours.
- Serve chilled, optionally with whipped cream on top.
Notes
- For a richer flavor, use full-fat cream cheese.
- This cheesecake can be made a day in advance.
- Garnish with chopped nuts for added texture.
